Executive Chef, Paul Johnson, has spent over the last two decades dedicated to his sushi trade and has shared his passion with our San Diego patrons. Chef Paul began his culinary career at a very young age, while spending summers with family in Japan. This amazing childhood opportunity exposed him to the beauty and art of Japanese cuisine. Learning from generations of Master sushi chefs gave Paul the foundation of traditional sushi skills. His culinary style has evolved over the years, delivering an eclectic mix of Asian fusion and traditional Japanese cuisine.
Executive Sushi Chef Robert Cassidy, grew up in the greater Los Angeles area, then moved to San Diego to pursue a career in Firefighting. While working as a Sushi Chef apprentice, he discovered his passion for Asian cuisine. Since 2001, Chef Rob has been dedicated to Sushi on the Rock with an honest passion, and innovative techniques. Rob's culinary flair continues to impress our clientele, delivering innovative specials and unique daily dishes. JAY JAY MERCADO
Jay is a Native of Honolulu, Hawaii, and has been involved in the restaurant industry since the age of 16. With a family history of great chefs, his love for cooking started at a very young age. Jay found his calling in the culinary field and began his journey taking culinary classes and working in various restaurants and resorts. He made his way into Japanese cuisine and for the past 9 years he has been focusing on heightening his skills in every aspect of preparation, creativity and serving Sushi. Jay’s passion is creating unique dishes specifically catered for every individual. He’s known to crack jokes, and keeps smiles on everyone’s faces along with happy bellies.
